We have all heard that if you want to stay healthy, you need to eat foods that are high in fiber, antioxidants, minerals, omega three fatty acids and the like.

Honestly, this sounds a little boring. That is because the only images that my mind can conjure up are vegetables and more vegetable. I guess that is why I have never faithfully followed a diet regimen.

However, weight loss and healthy eating does not have to be boring and painful. It can be fun if you learn how to mix food ingredients in appropriate measures.

Raw Strawberry Goddess Tarts w/ Superfood Chocolate Creme (Vegan, Gluten Free)

Easy. Impressive. Delicious. Here’s a little tip, for ye who don’t have mini tart pans. Wide mouth mason jar tops work just the same! They’re especially excellent because you can (gently) press the tarts out of the lids by pushing the tarts up and out from the bottom, using the lids circular base to guide the tart out of the pan. Then carefully remove the circular base with a knife and slide it away.

Ingredients

Crust
¼ cup almond meal
⅛ cup pistachio hearts
1 tablespoon chia
1 tablespoon coconut oil
2 medjool dates, pitted
pinch sea salt

Strawberry Filling
1 cup soaked cashews
1 cup frozen strawberries
¼ cup almond milk
5 – 6 large medjool dates, pitted

Superfood Chocolate Creme
½ large avocado
1 packet chocolate ALOHA Good Greens
1 tablespoon cacao powder
1 tablespoon maple syrup
OR (if you can’t get ahold of Good Greens)
3 tablespoons cacao powder
2 tablespoons maple syrup

Superfood Chocolate Drizzle
1 ounce ALOHA superfood chocolate (about half of a 2.2 ounce bar), chopped
1 teaspoon coconut oil
OR 1 ounce 70% or higher dark chocolate, chopped
1 teaspoon coconut oil
